Onion Flavored Pull Pork

A few weeks ago we went to my dads for dinner, he made a venison and onion sloppy joe's type thing. I have had a pork roast sitting in my freezer for a while so we cooked it up tonight when I was working late, and Adam mixed it up quickly before I got home. This has GREAT flavor!


Onion Flavored Pull Pork (From: My Dad)
  • 1 pork roast
  • 1 can of coke
  • 1/4 onion in slices
  • 1 packet of onion soup mix
  • water
  • seasoning salt

Place the roast in the slow cooker place onion slices over the top and then sprinkle on seasoning salt. Pour in can of coke and cook for 8 hours.

Once it's done shred/cut into pieces, fry in pan with onion soup mix and water, fry until combined and hot.

Serve on buns or over texas toast.

Salsa Chicken

I have wanted to try this recipe for a while but didn't have the ingredients. We bought the stuff about 3 weeks ago on our last grocery trip. I have been saving it for a Monday, because I am always exhausted and just want to come home and relax. This was perfect for that! I walked in the door changed clothes, Adam made the minute rice, and we sat down to eat. It was VERY simple!

Overall it was very good, I think next time I would use a little less salsa, maybe 3/4 or 1/2 cup, and also put a little shredded cheese on top when serving (I know I was OUT of cheese, it's a miracle, but it has been 3 weeks since last grocery trip!)

Slow Cooker Salsa Chicken (From: Sparkspeople)
  • 4 boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 package reduced sodium taco seasoning (I made my own)
  • 1 can reduced fat cream of mushroom soup (condensed)
  • 1/2 cup reduced fat sour cream

Add chicken to slow cooker.

Sprinkle taco seasoning over chicken.

Pour salsa and soup over chicken.

Cook on low for 6 to 8 hours.

Remove from heat and stir in sour cream.

Serve with rice.

Crock Pot Pork Chops

As you can see my slow cooker has became my new friend, it's such an easy way to make dinner, and doesn't heat up the apartment with the oven on. I have been bored with our pork chop recipes, so I was glad to find this recipe.

Slow Simmered Garlic Pork Chops(From: Bakingblonde)

  • 4 pork chops 1 inch thick (I used 3 boneless)
  • Salt and Pepper to taste
  • Paprika to taste
  • 1 T. Olive Oil
  • 1/4 cup low sodium soy sauce
  • 3 cloves garlic, minced
  • 1 onion, thickly sliced
  • 1/3 cup dry white wine or chicken broth
  • 2 1/2 T. brown sugar
  • 1/2 teaspoon crushed red pepper flakes (more or less to taste)
  • 1 T. cornstarch
  • 1 T. cold water

Rub chops with salt and pepper and paprika. In a medium skillet over medium heat, heat the olive oil and brown chops on both sides. Transfer to crockpot.

Add garlic and onion slices to porkchop pan with the residual oil and drippings. Cook and stir for 1 minute. Add soy sauce and wine/broth, brown sugar and red pepper flakes. Cook until the brown sugar is dissolved.

Pour over the pork chops in the crockpot and cook on low for 7 hours. Remove pork chops.

In a small bowl combine cornstarch and water, whisk until smooth. Slowly stir into crockpot.

Return the pork chops to the crockpot and cook for 30-45 minutes or until the sauce has thickened to desired consistency.

***Tips: I had to add more corn starch, it still didn't thicken so I simmered on the stove for a few moments. I served with mashed potatoes

Crockpot Lemon Chicken

Today was my first offical day of work since I left Honda in Feburary, it was a very overwhelming day (as is any job the first day). Last week when planning meals, I knew by the time I got home I wouldn't want to cook a big meal, so I planned a bunch of crock pot meals. Although this one wasn't my favorite, it was really nice to come home to a cooked meal. I found this recipe on one of the TheNest, cookbooks. It was a weight watchers recipe and thats what drew my attention but is not something I would make again.

Crock Pot Lemon Chicken (From: Whats Cooking Cookbook)

  • 6 whole boneless skinless chicken breasts ( I only used 2 for Adam and I)
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons ketchup
  • 3 tablespoons brown sugar
  • 6 oz frozen lemonade concentrate
  • 2 tablespoons cornstarch
  • 1/4 cup water

Dredge the chicken in flour mixed with salt. Shake off excess and brown in a hot skillet.

Remove chicken and put in the crockpot. Mix the lemonade, brown sugar, vinegar (use regular vinegar if you prefer) and catsup and pour over the chicken. Cook on high for 3-4 hours. When ready to serve, remove the chicken to a warm platter and thicken the sauce with the cornstarch/water solution, and serve along with the chicken.

Per Serving: 384 Calories; 3g Fat; 56g Protein; 30g Carbohydrate; 1g Dietary Fiber; 137mg

Crock Pot Lasagna Take 2

I made crock pot lasagna a few months ago, and although everyone else really enjoyed it, I didn't so much because I don't like ricotta. A friend showed me this recipe and I have had it saved on my computer since. We finally got to try it. It was AWESOME!!!

Slow Cooker Lasagna (From: Recipe Dispatch)
  • 1 pound lean ground beef
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 (29-ounce) can tomato sauce
  • 1 (6-ounce) can tomato paste
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 4 cups shredded mozzarella cheese
  • 1 1/2 cups cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 8 ounces lasagna noodles

Combine the ground beef, onion and garlic in a large skillet. Cook over medium-high heat until the beef is browned and crumbly, about 10 minutes; drain off any fat. Add 1 cup water, the tomato sauce, tomato paste, salt and oregano and mix well.

Combine the mozzarella, cottage cheese and Parmesan in a medium bowl and mix well. Spoon one-fourth of the meat sauce into a 5-quart slow cooker. Layer one-third of the noodles over the sauce, breaking the noodles as needed. Layer one-third of the cheese mixture over the noodles. Repeat noodle and cheese layers twice. Top with the remaining sauce.

Cover and cook on Low until the noodles are tender, 4 to 5 hours.

**Tips: We only used about 3 cups of mozzarella. Also I did 3 layers of pasta and cheese, then put sauce, then noodles, and a little play mozzarella cheese. I also used jarred spaghetti sauce instead of making my own.

Sloppy Joes and Blondies

Last night I tried my hand at my Dad's sloppy joes. I lived with my mom growing up, and would visit my dad on occasion I always loved when he made his sloppy joes. They were not even comparable to my mom's manwich can! I finally got the secret recipe from my dad, I don't think there was anything secret about it, just something he never really measured. This recipe is great!! I forgot to take a picture, will try to get one of the leftovers.

Dad's Sloppy Joes (My Dad)


  • 2 lbs mid grade hamburger (you want some fat to hold in the flavor)
  • 1 small yellow onion diced
  • 1 1/2 c. ketchup
  • 1 T. yellow mustard
  • 1 t. french brown mustard
  • 1/4 tsp. Dill
  • 1/4 t. Tarragon
  • 1/4 t. Basil
  • 1/4 McCormick Cajun seasoning
  • 2 T. Parsley

Fry hamburger and onion together. Place in slow cooker with seasoning, cook for 3-4 hrs at least, but for best taste cook for 6-8.


***Tips: I didn't have an cajun seasoning so used steak seasoning, I also added about a tablespoon more of the brown mustard. I mixed it up let it cook for 2 or so hours and tasted and adjusted. This is also not a really BBQ sauce recipe, more of a spice flavored one. My dad adds different seasonings, sometimes Worshershire sauce, etc.


Basic Blondies (Nestie: Bakingblonde)

  • 8 T. butter, melted
  • 1 c. brown sugar
  • 1 egg
  • 1 tsp. vanilla or 1/2 tsp. almond extract
  • pinch salt
  • 1 c. flour

Butter an 8x8" pan. Mix melted butter with brown sugar-beat until smooth. Beat in egg and then vanilla. Add salt, stir in flour. Mix in any additions (some ideas below). Pour into prepared pan. Bake at 350 degrees for 20-25 minutes or until set in the middle. Cool on rack before cutting.

Add in ideas:

  • 1/2 to 1 c. chocolate chips or butterscotch chips
  • 1/2 tsp mint extract in addition to, or in the place of vanilla extract
  • 1/2 c. chopped nuts, chopped up candy bars

I also made this sauce for on top...


Maple butter sauce (Copy Cat Recipes)

  • 3/8 cup maple syrup
  • ¼ cup butter
  • 3/8 cup brown sugar
  • 1 package cream cheese - (8 oz), softened
  • ¼ - ½ tsp maple extract or flavoring

Combine syrup and butter, cook over low heat until butter is melted. Stir in brown sugar until dissolved. Remove from heat and beat in cream cheese and maple extract until smooth. Heat again either over low heat or in the microwave at short intervals to reach desired sauce consistency. Serve over blondies topped with vanilla ice cream. (Should be enough sauce to generously top a 9- by 13-inch pan recipe)

***Tips: I halved this recipe, and didn't have any maple extract so added about a Tablespoon more of maple syrup.
