Ofcourse the cats wanted to help, what better way to get in the box from my new mixer bowl. Iced Orange Cookies (From: The Taste of Home Baking Book)
- 1/2 c. shortening
- 1 c. sugar
- 2 eggs
- 1/2 c. orange juice
- 1 T. grated orange peel
- 2 1/2 c. all-purpose flour
- 1 1/2 t. baking powder
- 1/2 t. salt
Icing:
- 2 c. confectioners sugar
- 1/4 c. orange juice
- 2 T. butter, melted
In a large mising box, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in orange juice and peel. Combine the flour, baking powder sand salt; gradually add to the creamed mixture.
Drop by rounded teaspoonsful 2 in. apart onto ungreased baking sheets. Bake at 350 for 10-12 minutes or until edges begin to brown. removeto write racks to cool. In a small bowl, combine icing ingredients until smooth; drizzle over cooled cookies.

i love orange flavored goodies... i bet these would also be good dipped in chocolate instead of topped with icing ;)
