Iced Orange Cookies

Adam and I are watching his 3 year old niece tonight, and I thought it would be fun to bake some cookies with her.
I also wanted to try a recipe from my new cookbook I got for Christmas. The Taste of Home Baking Book. Thanks Mom :-) These cookies were EXCELLENT I am very glad I tried them!
Ofcourse the cats wanted to help, what better way to get in the box from my new mixer bowl.
Iced Orange Cookies (From: The Taste of Home Baking Book)
  • 1/2 c. shortening
  • 1 c. sugar
  • 2 eggs
  • 1/2 c. orange juice
  • 1 T. grated orange peel
  • 2 1/2 c. all-purpose flour
  • 1 1/2 t. baking powder
  • 1/2 t. salt

Icing:

  • 2 c. confectioners sugar
  • 1/4 c. orange juice
  • 2 T. butter, melted

In a large mising box, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in orange juice and peel. Combine the flour, baking powder sand salt; gradually add to the creamed mixture.

Drop by rounded teaspoonsful 2 in. apart onto ungreased baking sheets. Bake at 350 for 10-12 minutes or until edges begin to brown. removeto write racks to cool. In a small bowl, combine icing ingredients until smooth; drizzle over cooled cookies.

i love orange flavored goodies... i bet these would also be good dipped in chocolate instead of topped with icing ;)
