White Chocolate Macadamia Nut Cookies

I made sugar cookies last week to bring with us to visit family over the weekend. I ended up making about 4 dozen cookies so I sent a dozen or so with Adam to work. Adam said they were eaten up quickly, and his supervisor request white chocolate macadamia nut cookies next. At first I kind of just laughed thinking yet right. But then realized I have never made macadamia nut cookies before and it would be something to put in my lonely blog. I look through my trusty Betty Crocker cookbook and found a recipe. I made them this morning and dropped them off at his work, again rave reviews!!!

White Chocolate Chunk-Macadamia Cookies (From: Betty Crocker Cookbook)

  • 1 c. packed brown sugar
  • 1/2 c. sugar
  • 1/2 c. butter (softened)
  • 1/2 shortening
  • 1 t. vanilla
  • 1 lg. egg
  • 2 1/4 c. all-purpose flour
  • 1 t. baking soda
  • 1/4 t. salt
  • 1 pkg (6 oz.) white baking bars, cut into chunks I used white chocolate chips
  • 1 jar. (3.5 oz) macadamia nuts (chopped)

Heat oven to 350.

In large bowl, beat sugars, butter, shortening, vanilla and egg with electric mixer on medium speed until light and fluffy, or mix with a spoon. Stir in flour, baking soda and salt (dough will be stiff). Stir in white chunks, and nuts.

On ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.

Bake 10 to 12 minutes or until light golden brown. Cool 1 to 2 minutes; removed from cookie sheet to wire rack.
