- 1 egg, room temperature and separated
- 1 c. all-purpose flour
- 1 t. baking powder
- 1/8 t. salt
- 1 T. sugar
- 1 t. lemon peel
- 2/3 c. cream
- 2 T lemon juice
- 4 T. butter or margarine, melted and cooled
Beat egg white in a small bowl until stiff and set aside.
Mix together dry ingredients and set aside.
Combine egg yolk, cream, melon juice, and butter. Add to dry ingredients, mixing until just blended.
Fold in beaten egg white until juice mixed. Do not over mix.
