Hot Dogs, and Mac N' Cheese

Tonight, we had a rather simple but mighty tasty dinner. I wanted to use up my Mac N' Cheese from the other night and thought it would be perfect for the recipe I found from a friend, for Fried Mac N' Cheese. It was just as good as Cheesecake Factories! To go with it, I made Hot Dog Roll-ups. I grew up with these, and introduced them to Adam when we met. We have been around once a year and they are always a tasty treat.

Hot Dog Roll-ups (From: My Mom)

  • 1 can croissant rolls
  • 1 pkg. hot dogs

Wrap the croissants around the hot dogs, and baked as directed on package of buns.

Fried Mac N' Cheese Balls (From: Nestie Joelen)


  • Leftover mac n' cheese, refrigerated
  • 2 eggs
  • 1/2 c. bread crumbs
  • 1/4 c. Parmesan cheese
  • 1/2 c. flour

Mix the bread crumbs and Parmesan together in a bowl

Scramble the eggs in a bowl

Pour flour into bowl

Cut the mac and cheese into pieces, roll in flour, then dip in eggs, then dip in bread crumbs.

Fry on medium heat for about 2-4 minutes. Or until golden brown.

**Tips, we found when it was super hot the centers weren't getting done. Keep a close eye on them so they don't over fry.

Your grandma and aunt are wondering why you didn't invite us over!? Great idea to use up the leftovers-- pretty creative.
