Tequilaberry Salad

A co-worker brings this salad to almost all of our pot-lucks, I had never had it before, but once I tasted it I fell in love. Lately I have been craving it and have been at a loss for what to bring to work for lunch. So I whipped up this salad and then I can take some each day.

I keep the dressing in a separate container then just add the amount I want and it keeps longer.

Tequilaberry Salad (From: Recipezaar)
  • 2 heads lettuce, chopped (or 2 1-lb bags pre-cut lettuce)
  • 1 head cauliflower, cut up in tiny pieces
  • 1 lb bacon, fried and crumbled
  • 1 cup Hellmann's mayonnaise (no substitutions)
  • 2 1/2 tablespoons white vinegar
  • 1/4 cup sugar
  • 1-1 1/2 cup parmesan cheese

Combine lettuce, cauliflower and bacon.

Mix mayonnaise, vinegar and sugar.

Add dressing to salad, add parmesan cheese. Serve immediately.

I usually make up the dressing the day before and the rest of the salad and then mix together just before serving.

Snickers Salad

This salad was at our 4th of July BBQ, I have made something similar but not using vanilla pudding. It really had some extra flavor and made it super creamy. I can't wait to have a reason to make it with the pudding.

Snickers Salad (From: My Dad's Girlfriend Kelly)


  • 6 (2 1/4 ounce) Snickers candy bars, chill and chop
  • 6 apples, cored and chopped into bite sized pieces (Granny Smith and/or Red Delicious)
  • 1 (12 oz) container Cool Whip
  • 1 (5 oz) box instant vanilla pudding (dry mix – do not prepare!)

Mix cool whip and dry pudding mix together.

Chop apples and chilled Snickers.

Mix together.

Drizzle caramel and chocolate over the top.

Chill for at least an hour-- Voila!

Hot Dogs with Salads

Last night, Adam and I had both of our Mom's over with our younger siblings. We grilled up Brats, and Hot Dogs, and then had some salads.

Macaroni Salad (From: cdkitchen.com)
  • 2 cups cooked macaroni
  • 1 cup frozen peas
  • 3/4 cup chopped celery
  • 1/2 cup ham - cooked and cubed
  • 3/4 cup cheddar cheese, shredded
  • 2 hard-boiled eggs, chopped
  • 1/4 cup sweet pickle relish
  • 1/2 cup ranch salad dressing
  • 1/2 cup mayonnaise
  • 1 teaspoon mustard
  • 1/4 teaspoon black pepper


In a large bowl, combine first 6 ingredients. In a small bowl, combine remaining ingredients. Add to macaroni mixture and toss to coat. Refrigerate until ready to serve, flavors will blend together as it chills.

***Tips: I left out the hard boiled egg, I diced the cheese instead of using shredded. It seemed to be lacking some kind of spice, not sure what. So mess with it a little if you are to try it.



Chicken Salad (Made by my Mom, From: Leslie)
For the Chicken Salad:

  • 1 cooked rotisserie chicken torn or cut into bite sized pieces
  • 2-3 stalks of celery (I diced mine small)
  • 1 granny smith apple (diced small)
  • 1 breaborn or honeycrisp apple (diced small)
  • 8 slices cooked bacon, crumbled
  • 1 c crumbled or diced white cheddar cheese

Toss dressing over the above ingredients, sprinkle with a little more fresh ground pepper and eat!


Dressing: Maple Mustard Vinaigrette

  • 1/2 c apple cider vinegar
  • 3 cloves garlic, peeled and crushed
  • 2 shallots, peeled and diced
  • 1 tsp fresh ground pepper
  • 1 Tablespoon smooth dijon mustard
  • 1 Tablespoon Course ground mustard
  • 2/3 cup maple syrup (the "real" stuff)
  • 1 c vegetable oil (olive oil doesn't work well)



Combine everything except the oil in a blender. Once blended completely, add oil in a slow stream. The dressing is also wonderful for glazing pork chops or chicken on the grill.

**Tips: My mom forgot to put the bacon and it was still an amazing salad. Also, she made this salad on Saturday and brought it to our house we had a taste and it was wonderful. We then stored it in the fridge until we ate last night, it was still good but not as good as the previous day. So I would make the day of to eat.

Green Food....

We had a party down at my moms for St. Pattys day, everyone was suppose to bring a good food. Everything was REALLY good.

Pistachio Salad (My Mom)

  • 1 tub of cool whip
  • 1 lg. can of pineapple
  • 1 pkg. pistachio pudding mix
  • 1 bag mini marshmallows
Mix cool whip and pudding mix together, slowly add in drained pineapple, then add in about 1/4 to 1/2 bag of mini-marshmallows.

Spinach Artichoke Dip (My Recipe) ** Not the best picture sorry

  • 1 block of frozen spinach
  • 1 can artichokes
  • 1 small cottage cheese
  • 1/4 c. mayo
  • 1/4 c. parmesan cheese
  • 1 bag mozzarella cheese

Blend spinich and artichokes together in bowl, with mixer, then add cottage cheese, mayo, and parmesan

Diet Coke Cup Cakes (Nestie Recipe)
  • 1 box of cake mix
  • 1 can diet pop

Mix cake mix and pop together, bake in oven and direction on box or until toothpick comes out clean.

***Tips, I have seen this recipe many times on the nest but was also a little worried to try them, I used a white cake mix and diet 7up, they were wonderful! People were amazed they were fat free, execpt for the frosting. You can use any kind of cake mix and diet pop for this recipe. They are a little more sticky and moist then regular but wonderful tasting!

Tortilla Roll-ups (Lori's Recipe)

  • 8oz sour cream
  • 8 oz cream cheese, softened
  • 1 cup chedder cheese
  • 4oz diced green chilis (well drained)
  • 4 oz diced black olives (well drained)
  • garlic powder to taste
  • seasoned salt to taste
  • (it called for green onions - but since I don't like onions - I didn't add any)
  • 5 (10 inch) flour tortillas

Combine all and spread on tortillas, Roll up and wrap in plastic wrap. Refrigerate about 2 hours. Unwrap and cut into 1" pieces.


Can be served with salsa.
